Vegan Steak Filet Mignon

- Seitan
Vital Wheat Gluten: 1 Cup
Lentils, cooked: 1/2 Cup
Nutritional Yeast: 1 Tbs.
Garlic Powder: 1 tsp.
Smoked Paprika: 1 tsp.
Chili Powder: 1 tsp.
Tomato Paste: 1 Tbs.
Liquid Aminos: 1 Tbs.
Beef Bouillion Paste: 1 tsp.
Vegetable Stock: 2 Tbs.
Liquid Smoke: 1/2 tsp.
Molasses: 1 tsp.
Worcestershire Sauce, vegan: 1 tsp.
Marmite: 1 tsp.
Beet Root Powder: 1 tsp.
Apple Cider Vinegar: 1 tsp.
Mushroom Powder: 1/8 Cup
Oil: 1 tsp.
- Braising Liquid
Vegetable Stock: 1 Cup
Red Wine: 1/2 Cup
Garlic Powder: 1 tsp.
Onion Powder: 1 tsp.
Oregano: 1 tsp.
Thyme: 1 tsp.
Miso: 1 tsp.
Basil: 1 tsp.
- Searing Ingredients
Butter: 3 Tbs.
Garlic: 3 cloves
Rosemary: 1 sprig
Directions
- Add all seitan ingredients except for vital wheat gluten to a food processor and blend well.
- Mix the ingredients into the vital wheat gluten.
- Knead the seitan for about 3 minutes.
- Portion the seitan to desired steak size.
- Wrap the steak tightly in aluminum foil, or other material of choice.
- Steam for about 35 minutes.
- Remove the cooked seitan from the foil.
- Cook in braising liquid for about 20 minutes.
- Sear in butter, garlic and rosemary to slight brown for about 5 minutes.
