Ingredients

  • Textured Vegetable Protein: 1 cup
    Vegan Beef Broth: 1 cup

  • Nutritional Yeast: 2 Tbsp

  • Miso Paste: 1 Tbsp

  • Mushroom Seasoning: 2 Tbsp

  • Onion Powder: 1 Tbsp

  • Garlic Powder: 1 Tbsp

  • Smoked Paprika: 2 tsp

  • Vegan Mayo: 1/4 Cup

  • Blackstrap Molasses: 1 Tbsp

  • Umami Sauce: 1 Tbsp

  • Vegan Worcestershire: 1 tsp

  • Vegan Beef Base: 1 tsp

  • Liquid Smoke: 1 tsp

  • Ground Flaxseed: 2 Tbsp

  • Vital Wheat Gluten: 1/4 Cup

  • Breadcrumbs: 1/2 Cup

  • methylcellulose: 1 Tbsp

  • Butter, melted: 8 Oz

Directions

  • Begin by mixing together the butter and the methylcellulose and then add to the freezer for 20-30 minutes.
  • Mix all liquid ingredients and let sit for 20 minutes.
  • Add all dry ingredients to the wet ingredients, except for the bread crumbs and vital wheat gluten.
  • Mix well.
  • Fold in bread crumbs completely.
  • Fold in vital wheat gluten completely.
  • Use a form and loosen methylcellulose and butter combo into the mixture and fold in.
  • Prepare some onion and saute until caramelized.
  • Once onions are complete, roll burger mixture into balls about 1.5x that of a meatball.
  • Gentle smash the balls into a burger shape (this works better in your hands).
  • Cook burgers about 3-5 minutes per side.
  • Top with onion and cheese and cover so the cheese melts.
  • Bun up the patties and you have a delicious smash burger.
