Onion, medium yellow: 1/2
Mushroom, portobello: 3 Oz.
Celery: 1 stalk
Tofu, firm: 5 Oz.
Almonds, ground: 2 Tbsp.
Flaxseed, ground: 2 Tbsp.
Parsley, fresh: 8-10 sprigs
Salt: 1 tsp.
Pepper: 1 tsp.
Cumin: 1 tsp.
Smoked Paprika: 1 tsp.
Garlic Powder: 1 tsp.
Directions
- Press tofu for at least 30 minutes.
- Prepare the vegetables.
- Dry roast vegetables in a skillet to remove liquid.
- Blend all ingredients in a food processor
- Roll the meatballs into spherical shape.
- Brown the meatballs in a skillet.
- Bake the meatballs at 350 degrees for 30 minutes.
