Ingredients

  • Red Onion: 1/2

  • Cubanelle Pepper: 1

  • Shiitake Mushrooms: 4 Oz.

  • Black Beans: 15 Oz.

  • Cumin: 1 tsp.

  • Garlic Powder: 1 tsp.

  • Chili Powder: 1 tsp.

  • Panko Bread Crumbs: 1 Cup

  • Flour: 1 Cup

  • Vegan Egg: 2

Directions

  • Dry roast/saute the onion, pepper and mushrooms until they no longer are moist.
  • Dry roast/saute the black beans until they are dried
  • Blend all ingredients except for the vegan egg, bread crumbs and flour in a food processor.
  • Form the patties and then coat in flour, then egg, then bread crumbs.
  • Cook each burger for about 5 minutes per side.

Notes

  • I had to add about 1/2 cup of bread crumbs to the mixture before shaping the patties in order to get them to take shape.
