The key to this recipe is cooking/drying the tofu before marinating and then cooking long enough to get the rice paper crunchy.

Ingredients

  • Sriracha: 2 Tbs.

  • Nutritional Yeast: 3 Tbs.

  • Garlic Powder: 1 1/2 Tbs.

  • Onion Powder: 1 Tbs.

  • Cumin: 1 Tbs.

  • Coriander: 1 Tbs.

  • Cayenne Pepper: 1/2 tsp.

  • Smoked Paprika: 1 1/2 Tbs

  • Maple Syrup: 1/4 Cup

  • Tamari or Soy Sauce: 3 Tbs.

  • Butter, vegan: 4 Tbs.

  • Tofu, extra firm: 1 Block

  • Rice Paper: 6 sheets

  • Oil: As needed

Directions

  • Begin by pressing the tofu to remove as much liquid as possible. (I suggest overnight)
  • Cut the tofu in 12 sticks.
  • Cook the tofu sticks 425 degrees for 10-20 minutes.
  • Make the sauce by mixing all the other ingredients except for the rice paper.
  • Roll the tofu sticks in the marinate.
  • Add two sticks to one rice paper, and then cut the rice paper in half.
  • Roll the rice paper around the tofu.
  • Brush marinade over the rice paper and cook at 425 for 20-30 minutes to desired choice of crunchiness.
  • Coat tofu sticks in BBQ sauce of choice and serve!
