Ingredients

  • Vegan Egg Yolk
  • Nutritional Yeast: 1 Tbsp

  • Pumpkin Puree: 1/4 Cup

  • Yogurt, vegan: 1/4 Cup

  • Oil: 1 Tbsp

  • Black Salt: 1/2 tsp

  • Sodium Alginate: 1/4 tsp

  • Aquafaba: 1/3 Cup

  • Mushroom Seasoning: 1 tsp

  • Onion Powder: 1 tsp

  • Garlic Powder: 1 tsp

  • Asafoetida: 1 tsp

  • Kalpha Churna: 1 tsp

  • Calcium Lactate: 1 tsp

  • Butter: 2 tbsp

  • Vegan Egg White
  • Tof, silken: 5 Oz

  • Rice Flour: 1 1/2 tbsp

  • Corn Starch: 1 tbsp

  • Yogurt, vegan: 1/8 Cup

  • Oil: 1 Tbsp

  • Black Salt: 1/4 tsp

  • Aquafaba: 1/8 Cup

  • Sodium Alginate Bath
  • Water: 3 Cups

  • Sodium Alginate: 5 tbsp

Directions

  • Make the sodium alginate bath and let cool until bubbles dissipate.
  • Add all egg yolk ingredients to a blender and blend well.
  • Add all egg white ingredients to a blender and blend well.
  • Add a tablespoon of egg yolk to the sodium alginate bath and let sit for about 2 minutes so it completely submerges.
  • Remove and place the egg yolk in a bowl of cold water.
  • Add about 2 tablespoons of egg white to a skillet and let it firm a bit.
  • Add an egg yolk to the top of the egg white.
  • Season with salt and pepper.
  • Cover the egg for about a minute and let it cook.
  • Serve and enjoy!
