- Vegan Egg Yolk
Nutritional Yeast: 1 Tbsp
Pumpkin Puree: 1/4 Cup
Yogurt, vegan: 1/4 Cup
Oil: 1 Tbsp
Black Salt: 1/2 tsp
Sodium Alginate: 1/4 tsp
Aquafaba: 1/3 Cup
Mushroom Seasoning: 1 tsp
Onion Powder: 1 tsp
Garlic Powder: 1 tsp
Asafoetida: 1 tsp
Kalpha Churna: 1 tsp
Calcium Lactate: 1 tsp
Butter: 2 tbsp
- Vegan Egg White
Tof, silken: 5 Oz
Rice Flour: 1 1/2 tbsp
Corn Starch: 1 tbsp
Yogurt, vegan: 1/8 Cup
Oil: 1 Tbsp
Black Salt: 1/4 tsp
Aquafaba: 1/8 Cup
- Sodium Alginate Bath
Water: 3 Cups
Sodium Alginate: 5 tbsp
Directions
- Make the sodium alginate bath and let cool until bubbles dissipate.
- Add all egg yolk ingredients to a blender and blend well.
- Add all egg white ingredients to a blender and blend well.
- Add a tablespoon of egg yolk to the sodium alginate bath and let sit for about 2 minutes so it completely submerges.
- Remove and place the egg yolk in a bowl of cold water.
- Add about 2 tablespoons of egg white to a skillet and let it firm a bit.
- Add an egg yolk to the top of the egg white.
- Season with salt and pepper.
- Cover the egg for about a minute and let it cook.
- Serve and enjoy!
