Ingredients

  • Sodium Alginate Bath
  • Water: 3 Cups

  • Sodium Alginate: 5 tsp.

  • Egg Whites
  • Vegan Yogurt, plain: 1/4 Cup

  • Rice flour: 1/8 Cup

  • Aquafaba: 1/8 Cup

  • Black salt: 1/4 tsp.

  • Egg Yolks
  • Pumpkin Puree: 1/2 Cup

  • Vegan Yogurt, plain: 1/8 Cup

  • Avocado Oil: 1 Tbsp.

  • Tapioca Starch: 1 tsp.

  • Nutritional Yeast: 1 Tbsp.

  • Black Salt: 1/2 tsp.

  • Aquafaba: 2 tsp.

  • Mushroom Seasoning: 1 tsp.

  • Onion Powder: 1/2 tsp.

  • Garlic Powder: 1/2 tsp.

  • Calcium Lactate: 1/2 Tbsp.

Directions

  • Mix all the ingredients for the sodium alginate bath and let sit in the refrigerator for about an hour.
  • Mix all the ingredients for the egg whites.
  • Mix all the ingredients for the egg yolks.
  • Gently add the egg yolk to the sodium alginate bath, 1 tablespoon at a time.
  • Scrape off excess sodium alginate and add the egg yolk to cool water.
  • Carefully, remove the egg yolk from the water.
  • Add about 1-2 tablespoons of egg white to a skillet.
  • Add 1 egg yolk to the center of the egg white and cover with a lid.
  • Let cook for about 3-5 minutes.
  • Plate up and top with salt.
