Ingredients
- Sodium Alginate Bath
Water: 3 Cups
Sodium Alginate: 5 tsp.
- Egg Whites
Vegan Yogurt, plain: 1/4 Cup
Rice flour: 1/8 Cup
Aquafaba: 1/8 Cup
Black salt: 1/4 tsp.
- Egg Yolks
Pumpkin Puree: 1/2 Cup
Vegan Yogurt, plain: 1/8 Cup
Avocado Oil: 1 Tbsp.
Tapioca Starch: 1 tsp.
Nutritional Yeast: 1 Tbsp.
Black Salt: 1/2 tsp.
Aquafaba: 2 tsp.
Mushroom Seasoning: 1 tsp.
Onion Powder: 1/2 tsp.
Garlic Powder: 1/2 tsp.
Calcium Lactate: 1/2 Tbsp.
Directions
- Mix all the ingredients for the sodium alginate bath and let sit in the refrigerator for about an hour.
- Mix all the ingredients for the egg whites.
- Mix all the ingredients for the egg yolks.
- Gently add the egg yolk to the sodium alginate bath, 1 tablespoon at a time.
- Scrape off excess sodium alginate and add the egg yolk to cool water.
- Carefully, remove the egg yolk from the water.
- Add about 1-2 tablespoons of egg white to a skillet.
- Add 1 egg yolk to the center of the egg white and cover with a lid.
- Let cook for about 3-5 minutes.
- Plate up and top with salt.
