Ingredients

  • Flour: 3 Cups

  • Water: 1 1/4 Cups

  • Salt: 3/4 Tsp.

  • Black Pepper: 1/4 Tsp.

  • Paprika: 1/2 Tsp.

  • Cayenne Pepper: 1 Pinch

  • Garlic Powder: 1/2 Tsp.

  • Onion Powder: 1/2 Tsp.

  • Liquid Aminos: 1/2 Tsp.

  • Avocado Oil: 1 Tbsp.

  • Vegetable Stock: 1/2 Cup

  • Water: 1 Cup

Directions

  • Prepare the dough: Combine the flour with water and let rest for 30 minutes
  • Wash the Gluten: Mix the flour and water into a dough and then add water to submerge the dough completely. Knead the dough, and empty the water. Keep doing this until all the flour is removed and the water is clear.
  • Rest the Gluten: Place the remaining gluten over a strainer so the extra water drips out of the gluten.
  • Prepare the marinade: Mix all remaining ingredients except for the vegetable stock and water.
  • Marinade the gluten: Add the gluten and knead the marinade. Rest for about 10 minutes.
  • Braise the gluten: Shape the gluten into a chicken shape and braise to form some browning on the outside of the gluten. Add the stock and water and let simmer for about 20 minutes.
