To make the vegan chicken, you start by combining 1 1/4 cups of vital wheat gluten, 6 oz of silken firm tofu, 3/4 tsp of garlic powder, 2 tsp of vegetable broth powder, 1 Tbs of onion powder, 1/2 tsp of salt, 1/4 tsp of lemon pepper, 1 Tbs of Dijon mustard, 1 tsp of soy sauce, 2 Tbs of olive oil, and 1/4 cup of water in a food processor or a bowl. Pulse or mix the ingredients until they form a ball or come together.
Next, fold 8 oz of sliced oyster mushrooms into the dough. Then, shape the vegan chicken into desired shapes such as wings, breasts, etc. Place the vegan chicken wings in a lightly greased steaming basket and steam over a light simmer for 25 minutes, flipping halfway to cook evenly.
